  • 1 can (15 oz) chickpeas (drained and rinsed)
  • 1/4 cup finely chopped onion
  • 2 cloves garlic (minced)
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 1 large egg
  • 1/4 cup breadcrumbs (plus more if needed)
  • 2 tablespoons olive oil for frying

Instructions

  1. Pulse Chickpeas: In a food processor, pulse the chickpeas until mostly smooth but still slightly chunky.
  2. Mix Ingredients: Transfer chickpeas to a mixing bowl, add onion, garlic, parsley, cumin, paprika, salt, pepper, lemon juice, and egg. Stir to combine, then mix in breadcrumbs. Let sit for 5 minutes.
  3. Shape and Fry: Shape mixture into 6 patties. Heat olive oil in a skillet over medium heat. Fry patties for 3–4 minutes per side until golden and crispy. Drain on paper towels and serve warm.
