- 1 can (15 oz) chickpeas (drained and rinsed)
- 1/4 cup finely chopped onion
- 2 cloves garlic (minced)
- 1/4 cup chopped fresh parsley
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon lemon juice
- 1 large egg
- 1/4 cup breadcrumbs (plus more if needed)
- 2 tablespoons olive oil for frying
Instructions
- Pulse Chickpeas: In a food processor, pulse the chickpeas until mostly smooth but still slightly chunky.
- Mix Ingredients: Transfer chickpeas to a mixing bowl, add onion, garlic, parsley, cumin, paprika, salt, pepper, lemon juice, and egg. Stir to combine, then mix in breadcrumbs. Let sit for 5 minutes.
- Shape and Fry: Shape mixture into 6 patties. Heat olive oil in a skillet over medium heat. Fry patties for 3–4 minutes per side until golden and crispy. Drain on paper towels and serve warm.
Notes
- Serve with tzatziki, hummus, or tucked into a pita with veggies.
- For a vegan version, replace the egg with a flax egg (1 tablespoon flaxseed meal + 3 tablespoons water).
