Ingredients
Scale
Chicken Mixture
- 4 cups cooked and shredded chicken breast
- 1 (10.5 oz) can cream of chicken soup
- 1 cup sour cream
- 1 (10 oz) can Rotel diced tomatoes with green chiles, drained
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
- 1 1/2 cups shredded cheddar cheese
Casserole Layers
- 1 (9.75 oz) bag nacho cheese Doritos, lightly crushed (divided)
- 1/2 cup shredded cheddar cheese (for topping)
- Chopped fresh cilantro or green onions for garnish (optional)
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
- Mix the filling: In a large bowl, combine the shredded chicken, cream of chicken soup, sour cream, drained Rotel diced tomatoes with green chiles, garlic powder, onion powder, paprika, black pepper, and 1 1/2 cups of shredded cheddar cheese. Stir the ingredients thoroughly until they are well mixed and uniform.
- Prepare the baking dish: Lightly grease a 9×13-inch baking dish to prevent sticking. Spread a layer of lightly crushed Doritos evenly across the bottom of the dish to form the base layer.
- Assemble the casserole: Spoon the chicken and cheese mixture evenly over the layer of Doritos. Then sprinkle the remaining crushed Doritos evenly over the top of the chicken mixture. Finally, top everything with the remaining 1/2 cup of shredded cheddar cheese.
- Bake covered: Cover the baking dish tightly with aluminum foil. Place it in the preheated oven and bake for 25 minutes to let the flavors meld and the casserole heat through.
- Bake uncovered: Remove the foil and continue baking for another 10 minutes. This step allows the cheese on top to melt completely, become bubbly, and develop a golden finish.
- Garnish and serve: Once baked, remove the casserole from the oven and optionally garnish with chopped fresh cilantro or green onions to add a fresh, vibrant touch. Serve the casserole warm for the best experience.
Notes
- Use rotisserie chicken for added convenience and flavor.
- For a spicier casserole, add sliced jalapeños or use spicy Rotel tomatoes.
- You can substitute plain Greek yogurt for sour cream for a lighter option.
- Leftovers can be refrigerated and reheated for a quick meal later.
