Pasta:
- 12 oz pasta (penne, fusilli, or spaghetti)
Sauce:
- 2 tablespoons olive oil
- 3 cloves garlic (minced)
- 1 pint cherry tomatoes (halved)
- 5 oz fresh spinach
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional)
- ½ cup grated Parmesan cheese
- ¼ cup pasta water (reserved)
- chopped fresh basil for garnish (optional)
Instructions
- Cook the Pasta: Cook pasta in a large pot of salted boiling water according to package directions. Reserve ¼ cup of pasta water, then drain and set pasta aside.
- Make the Sauce: In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant. Add cherry tomatoes and cook until they begin to soften. Add spinach and cook until wilted. Season with salt, pepper, and red pepper flakes if using.
- Combine Everything: Add the cooked pasta to the skillet along with the reserved pasta water and Parmesan cheese. Toss well until everything is combined and the sauce coats the pasta.
- Serve: Garnish with fresh basil and extra Parmesan if desired. Serve immediately.
