This Decadent Strawberry Chocolate Fantasy Ice Cream Cake is a luscious no-bake dessert featuring layers of rich chocolate cookie crust, strawberry and chocolate ice cream, fresh strawberries, and drizzled fudge sauce. For the crust:

  • 2 cups chocolate cookie crumbs (like Oreos, crushed with filling)
  • ¼ cup unsalted butter, melted

For the layers:

  • 1 quart strawberry ice cream, slightly softened
  • 1 quart chocolate ice cream, slightly softened
  • 1 cup chocolate fudge sauce, warmed slightly
  • 1 ½ cups sliced fresh strawberries
  • ½ cup mini chocolate chips or chocolate shavings

For topping:

  • 1 ½ cups whipped cream or whipped topping
  • Extra strawberries and chocolate drizzle for garnish

Instructions

  1. Prepare the crust: Line the bottom of a 9-inch springform pan with parchment paper. In a bowl, mix the crushed chocolate cookies with melted butter until combined. Press the mixture firmly into the bottom of the pan to form the crust. Freeze for 10 minutes to set.
  2. Add strawberry layer: Spread the softened strawberry ice cream evenly over the crust. Top with a layer of sliced strawberries, pressing them gently into the ice cream. Freeze for 30 minutes.
  3. Add chocolate layer: Spread the chocolate ice cream on top of the strawberry layer. Drizzle with warm fudge sauce and sprinkle with mini chocolate chips or chocolate shavings. Freeze for at least 4 hours, or overnight, until firm.
  4. Finish and serve: Before serving, spread whipped cream over the top of the cake and decorate with more sliced strawberries and an extra drizzle of chocolate sauce. Release from the pan, slice, and serve immediately.
