Instructions

  1. Prepare the Yogurt Mixture: In a mixing bowl, combine the plain Greek yogurt, fresh blueberries, honey or maple syrup if using, and vanilla extract. Gently fold the ingredients to mix without crushing the blueberries too much, ensuring an even distribution of flavors.
  2. Scoop into Molds: Using a spoon or small cookie scoop, portion the yogurt mixture into silicone molds or a lined mini muffin tin, filling each cavity about three-quarters full to allow room for expansion when freezing.
  3. Freeze: Place the filled molds in the freezer and allow them to freeze completely, about 2 hours, until the bites are solid.
  4. Melt the Dark Chocolate: While the yogurt bites freeze, melt the dark chocolate chips in a microwave-safe bowl in 20-second intervals, stirring in between, until smooth and fully melted. Alternatively, melt using a double boiler on low heat.
  5. Dip the Frozen Bites in Chocolate: Once the yogurt bites are frozen solid, quickly dip each bite into the melted dark chocolate to coat it partially or fully as desired. Immediately return the coated bites to the freezer on a parchment-lined tray to allow the chocolate to harden.
