Instructions
- Prepare the Dough: In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the cold, cubed unsalted butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs with pea-sized pieces of butter.
- Add Water and Form Dough: Gradually add 6 to 8 tablespoons of cold water, one tablespoon at a time, mixing gently until the dough just comes together. Avoid overworking to keep the crust tender. Shape the dough into two disks, wrap in plastic, and refrigerate for at least 30 minutes.
- Roll and Cut Dough: Preheat your oven to 375°F (190°C). On a lightly floured surface, roll out one dough disk to about 1/8-inch thickness. Use a round cutter to cut out the bottom pie crusts and place them on a parchment-lined baking sheet. Repeat with the second disk to create top crusts, optionally cutting small vents or shapes for steam release.
- Assemble Pies: Spoon about 2 tablespoons of your chosen fruit filling into each bottom crust. If desired, mix the fruit with 1 tablespoon lemon juice to balance sweetness. Place the top crust over the filling and crimp the edges to seal tightly. Brush the tops with the beaten egg wash for a shiny, golden finish.
- Bake: Bake the pies in the preheated oven for 25 to 30 minutes or until the crust is golden brown and the filling bubbles slightly. Keep an eye to prevent over-browning.
