Description

These Crispy Rolled Chipotle Beef Tacos feature seasoned ground beef infused with smoky chipotle flavors, wrapped in warm corn tortillas, rolled tightly, and fried to golden perfection. Served with sour cream, guacamole, and salsa, they are a delicious and satisfying Mexican-inspired main course perfect for a flavorful meal.

Ingredients

Scale

Beef Mixture

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 chipotle pepper in adobo sauce, minced
  • 1 tablespoon adobo sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup beef broth or water

Tacos

  • 8 small corn tortillas
  • 1 cup shredded cheddar or Monterey Jack cheese
  • Oil for frying (such as vegetable or canola oil)

For Serving

  • Sour cream
  • Guacamole
  • Salsa

Instructions

  1. Cook the Beef: Heat olive oil in a skillet over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess fat if needed.
  2. Season the Beef: Stir in the minced chipotle pepper, adobo sauce, ground cumin, smoked paprika, garlic powder, onion powder, salt, black pepper, and beef broth. Simmer for 3–5 minutes until the mixture thickens and the flavors meld, then remove from heat.
  3. Prepare Tortillas: Warm the corn tortillas slightly to make them pliable and easier to roll without cracking.
  4. Assemble the Tacos: Place a spoonful of the beef mixture in the center of each tortilla and sprinkle with shredded cheese. Roll the tortilla tightly around the filling. Secure with toothpicks if necessary to keep them closed during frying.
  5. Fry the Rolled Tacos: Heat oil in a skillet over medium-high heat. Fry the rolled tacos in batches, placing them seam side down first, cooking until golden and crispy on all sides, about 2–3 minutes per side. Drain the cooked tacos on paper towels to remove excess oil.
  6. Serve: Serve the crispy rolled chipotle beef tacos hot with sour cream, guacamole, and salsa on the side for dipping or topping.

Notes

  • For a healthier alternative, brush the rolled tacos with oil and bake at 425°F for 15–20 minutes, flipping halfway through until crispy.
  • Use shredded leftover beef or brisket as a shortcut for the filling to save time.
  • Be careful not to overfill the tortillas to avoid them breaking while rolling or frying.
  • Adjust the spice level by adding more or fewer chipotle peppers in adobo sauce according to your preference.
  • To keep tacos warm before serving, place them in a low oven on a baking sheet lined with paper towels.
