Ingredients
Scale
Potatoes
- 1 pound small Yukon Gold or red potatoes
Seasoning
- 2 tablespoons olive oil
- 2 teaspoons garlic powder (or 3 cloves fresh garlic, minced)
- 1 teaspoon salt
- ½ teaspoon black pepper
Topping
- ½ cup grated fresh Parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat the oven: Preheat your oven to 425°F (220°C) to ensure it is hot enough to crisp the potatoes nicely.
- Prepare the potatoes: Scrub the potatoes clean under running water to remove any dirt, then slice them in half to allow even cooking and maximum surface area for crispiness.
- Toss with seasoning: In a large bowl, toss the halved potatoes with olive oil, garlic powder, salt, and black pepper. This evenly coats the potatoes ensuring each bite is flavorful.
- Add Parmesan cheese: Sprinkle the freshly grated Parmesan over the seasoned potatoes and toss again to distribute the cheese evenly across the potatoes.
- Arrange and bake: Spread the coated potatoes in a single layer on a parchment-lined baking sheet. Bake in the preheated oven for 30-35 minutes, or until the potatoes are golden brown and crispy on the outside.
- Finish and serve: Remove the potatoes from the oven and immediately sprinkle with chopped fresh parsley to add brightness and freshness before serving.
Notes
- You can substitute garlic powder with fresh minced garlic for a stronger garlic flavor.
- Using parchment paper helps prevent sticking and makes clean-up easier.
- For extra crispiness, flip the potatoes halfway through baking.
- Yukon Gold potatoes are recommended for their creamy texture, but red potatoes work well too.
- This recipe can be doubled easily for larger crowds.
