Onion Rings:
- 2 large yellow onions, sliced into 1/2-inch rings
Batter:
- 1 1/4 cups all-purpose flour (divided)
- 1/4 cup cornstarch
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
- 1 egg
- 1 cup cold sparkling water or club soda
Coating:
- 1 1/2 cups panko breadcrumbs

- Vegetable oil for frying
Instructions
- Prepare Onions: Separate the onion slices into rings. Lightly dredge the rings in 1/4 cup of flour.
- Make Batter: In a bowl, combine remaining flour, cornstarch, baking powder, salt, paprika, and black pepper. Add egg and cold water; whisk until smooth.
- Coat Rings: Dip onion rings in batter, then coat in panko breadcrumbs.
- Fry: Heat oil to 350°F. Fry rings in batches for 2–3 minutes until golden brown and crispy.
- Serve: Drain on paper towels and serve hot with dipping sauce.
Notes
- Enhance flavor with garlic powder or cayenne in the batter.
- Keep rings warm in a 200°F oven while frying.
