- zest and juice of 1 lime

Instructions
- Preheat the oven: Preheat the oven to 425°F (220°C).
- Prepare sweet potatoes: Toss diced sweet potatoes with olive oil, chipotle chili powder, smoked paprika, garlic powder, salt, and pepper. Roast for 25–30 minutes until crispy.
- Make lime crema: Combine lime zest, lime juice, sour cream, and salt.
- Warm tortillas: Heat tortillas in a skillet or microwave.
- Assemble tacos: Fill tortillas with sweet potatoes, black beans, red onion, avocado, cilantro, and lime crema.
- Serve: Drizzle with lime crema and enjoy!
