Description

  • ½ cup buttermilk
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¾ cup cornstarch
  • ½ cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • vegetable oil for frying

For the Bang Bang Sauce:

  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 tablespoon honey
  • 1 teaspoon rice vinegar

Instructions

  1. Marinate the Chicken: In a medium bowl, toss the chicken pieces with buttermilk, salt, and pepper. Let marinate for at least 15 minutes (or up to 1 hour).
  2. Prepare the Coating: In another bowl, whisk together cornstarch, flour, garlic powder, and paprika.
  3. Fry the Chicken: Heat about 1 inch of vegetable oil in a deep skillet or saucepan over medium-high heat. Dredge the marinated chicken pieces in the flour mixture, pressing to coat well. Working in batches, fry the chicken for 3–4 minutes per side until golden brown and crispy. Remove and drain on a paper towel-lined plate.
  4. Make the Bang Bang Sauce: In a small bowl, whisk together all the sauce ingredients until smooth.
  5. Coat the Chicken: Toss the hot chicken bites in the Bang Bang sauce until coated or serve the sauce on the side for dipping. Garnish with chopped green onions or sesame seeds if desired. Serve immediately.

Notes

  • For a lighter version, air-fry the chicken at 400°F for 18–20 minutes, shaking halfway through.
  • You can also bake at 425°F for 25–30 minutes.
  • Adjust sriracha to make it milder or spicier.
