Ingredients
Scale
Chicken and Seasoning
- 2 tablespoons olive oil
- 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
- Salt and pepper, to taste
- 1 packet (1 oz) ranch seasoning mix
- 3 cloves garlic, minced
Broth and Noodles
- 4 cups chicken broth
- 8 oz egg noodles
Sauce
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
Garnish
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the bite-sized chicken pieces and season with salt and pepper. Cook for 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
- Sauté Garlic: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant, making sure not to burn it.
- Add Broth and Seasoning: Pour in the chicken broth and sprinkle in the ranch seasoning mix. Stir well to combine all ingredients evenly.
- Cook Noodles: Bring the mixture to a boil. Add the egg noodles, then reduce the heat to medium-low. Cover the skillet and let it simmer for 8-10 minutes, or until the noodles are tender and cooked through.
- Finish the Sauce: Stir in the heavy cream, grated Parmesan cheese, and the cooked chicken pieces. Continue to simmer for another 2-3 minutes, allowing the sauce to thicken and flavors to meld.
- Season to Taste: Taste the dish and adjust seasoning by adding more salt and pepper if needed.
- Garnish and Serve: Sprinkle with chopped fresh parsley for a bright, fresh finish before serving.
Notes
- You can substitute chicken breasts with boneless skinless chicken thighs for a juicier result.
- Use low-sodium chicken broth to control the saltiness of the dish.
- For a lighter option, substitute heavy cream with half-and-half or whole milk; however, the sauce may be less thick and creamy.
- Fresh parsley adds a nice color and freshness but can be omitted or replaced with chopped chives or basil.
- Ensure not to overcook the noodles during simmering to prevent them from becoming mushy.
