Description

This Creamy Ranch Beef and Sweet Corn Bowtie Casserole is a comforting, flavorful dish combining tender bowtie pasta, seasoned ground beef, sweet corn, and a rich, cheesy ranch sauce. Perfectly baked to golden bubbly perfection, it’s an easy and satisfying meal that the whole family will love.

Ingredients

Scale

Pasta

  • 12 oz bowtie pasta

Beef Mixture

  • 1 lb ground beef
  • 2 tbsp olive oil
  • 1 packet ranch seasoning mix
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder
  • Salt and pepper, to taste

Sauce

  • 1 can (10 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • 1 can (15 oz) sweet corn, drained
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and generously grease a 9×13-inch baking dish to prepare for the casserole assembly.
  2. Cook the Pasta: Bring a large pot of salted water to a boil and cook the bowtie pasta according to package instructions until al dente. Drain the pasta and set it aside.
  3. Cook the Beef: Heat olive oil in a skillet over medium heat. Add the ground beef and brown it thoroughly, breaking it up as it cooks. Once cooked, drain excess fat. Stir in ranch seasoning, smoked paprika, onion powder, and salt and pepper to taste. Mix well and remove from heat.
  4. Mix the Sauce: In a large bowl, whisk together the cream of chicken soup, sour cream, and shredded cheddar cheese until the mixture is smooth and creamy.
  5. Combine Ingredients: Add the cooked pasta, seasoned ground beef, and drained sweet corn into the bowl with the sauce. Stir until all ingredients are evenly coated and combined.
  6. Top and Bake: Transfer the mixture into the prepared baking dish. Sprinkle extra shredded cheddar cheese and grated Parmesan cheese on top. Bake in the preheated oven for 20-25 minutes, or until the casserole is bubbly and the cheese is golden and slightly crispy.
  7. Serve: Remove the casserole from the oven and let it cool for 5 minutes before serving. Enjoy your creamy, cheesy, and flavorful ranch beef casserole!
