Instructions

  1. Cook the Pasta: Cook pasta according to the package directions until al dente. Reserve some pasta water before draining to help adjust the sauce consistency later.
  2. Cook the Chicken: Heat olive oil and butter in a large pan over medium heat. Add the chicken pieces and cook for 5-6 minutes until they are cooked through and slightly golden.
  3. Sauté Aromatics: Add the finely diced shallot to the pan and cook for 1 minute until softened. Then add minced garlic and cook for an additional 30 seconds until fragrant.
  4. Season and Deglaze: Stir in the Italian seasoning. Pour in the dry white wine to deglaze the pan, scraping up any browned bits. Let it cook for 1-2 minutes to reduce slightly.
  5. Add Cream and Combine: Pour in the heavy cream and cook until the sauce thickens slightly. Then add the cooked pasta to the pan and toss to coat in the sauce. Use reserved pasta water to loosen the sauce if it is too thick.
  6. Finish and Serve: Stir in the grated Parmesan and chopped fresh parsley. Season with salt and freshly ground black pepper to taste. Serve immediately while hot.
