  • 1 pound chicken sausage links, sliced into rounds

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil: In a large skillet over medium heat, heat olive oil.
  2. Cook sausage: Add sliced chicken sausage and cook until browned on both sides, about 5 minutes. Remove sausage and set aside.
  3. Sauté aromatics: In the same skillet, sauté onion and garlic until softened, about 2 minutes.
  4. Cook vegetables: Add bell peppers and zucchini, cook until tender, about 5 minutes. Add cherry tomatoes and cook for another 2 minutes.
  5. Combine liquids: Pour in chicken broth and heavy cream, season with Italian seasoning, red pepper flakes, salt, and black pepper. Simmer until slightly thickened, about 5 minutes.
  6. Finish dish: Return sausage to the skillet, stir in Parmesan cheese until melted and creamy. Garnish with parsley before serving.
