For the Chicken:

  • 1 pound boneless skinless chicken breasts, cut into thin strips
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder

For the Sauce:

  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 8 ounces cremini or button mushrooms, sliced
  • 1 small onion, finely diced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped for garnish

Instructions

  1. Cook the Pasta: Boil salted water and cook spaghetti until al dente. Reserve ½ cup pasta water, drain, and set aside.
  2. Cook the Chicken: Season and cook chicken in olive oil until golden brown. Set aside.
  3. Make the Sauce: Sauté garlic, mushrooms, and onion in butter. Add chicken broth, heavy cream, Parmesan, seasonings, and cook until slightly thickened.
  4. Combine: Return chicken to skillet, add spaghetti, toss together. Add reserved pasta water if needed.
  5. Garnish and Serve: Top with parsley and serve hot.

Notes

  • For extra flavor, add a splash of white wine with the broth.
  • Spinach or sun-dried tomatoes are great additions.
