For the Brie Sauce:

  • 2 tablespoons unsalted butter
  • 8 ounces cremini or button mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 5 ounces Brie cheese, rind removed, cut into small pieces
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
  • Chopped fresh parsley for garnish

Instructions

  1. Season the Chicken: Season the chicken breasts with salt and pepper.
  2. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 5–6 minutes per side until golden brown. Remove from skillet.
  3. Prepare the Brie Sauce: In the same skillet, add butter, mushrooms, and garlic. Cook until mushrooms are browned. Pour in chicken broth, then add cream and Brie. Stir until smooth. Return chicken to skillet.
  4. Simmer: Simmer for 2–3 minutes to reheat the chicken and meld flavors. Garnish with parsley before serving.
