For the Creamy Asparagus Soup:

  • 2 tablespoons unsalted butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 1/2 lbs fresh asparagus, trimmed and cut into 2-inch pieces
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup heavy cream
  • 1 tablespoon lemon juice
  • Fresh parsley or chives for garnish

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onion and cook for 4–5 minutes until softened.
  2. Stir in the garlic and cook for 1 minute more.
  3. Add the asparagus, vegetable broth, salt, and pepper. Bring to a boil, then reduce heat and simmer for 12–15 minutes, or until the asparagus is very tender.
  4. Remove from heat and carefully puree the soup using an immersion blender (or transfer in batches to a blender) until smooth.
  5. Stir in the heavy cream and lemon juice.
  6. Taste and adjust seasoning if needed.
  7. Serve hot, garnished with fresh parsley or chives.

Notes

  • For a lighter version, substitute half-and-half or milk for the heavy cream.
  • You can also add a handful of spinach before blending for a richer green color.
