Soup:

  • 4 cups broccoli florets
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Garnish:

  • Croutons
  • Shredded cheddar cheese
  • Chopped fresh parsley

Instructions

  1. Sauté Aromatics: In a large pot, sauté the onion and garlic until softened.
  2. Add Broccoli: Add the broccoli florets and cook for another 5 minutes.
  3. Simmer: Pour in the vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Blend: Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender in batches.
  5. Finish: Stir in the heavy cream and season with salt and pepper. Heat through but do not boil.
  6. Serve: Ladle the soup into bowls and top with croutons, shredded cheddar cheese, and chopped parsley.

Notes
