Ingredients
Scale
For the Congee
- 1 cup short-grain rice (or any rice you prefer)
- 6 cups water (or vegetable broth for more flavor)
- 1 tablespoon ginger, finely chopped
- 1 tablespoon sesame oil
- Salt to taste
For the Miso Sauce
- 2 tablespoons miso paste (white or red)
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon honey (optional, for a touch of sweetness)
- 1/4 cup water (to adjust sauce consistency)
For Serving
- 2 soft-boiled eggs (or poached eggs)
- Chopped green onions or scallions
- Toasted sesame seeds
- Fresh cilantro or parsley
- Sautéed spinach or bok choy
- Pickled ginger
Instructions
- Prepare the Rice: Rinse the rice under cold water until the water runs clear to remove excess starch. This helps achieve a smooth and creamy congee texture.
- Cook the Congee: In a large pot, combine the rinsed rice, 6 cups of water or vegetable broth, and finely chopped ginger. Bring to a boil over high heat, then reduce the heat to low and simmer gently, stirring occasionally, until the rice breaks down and the mixture thickens to a porridge consistency. This usually takes about 1 to 1.5 hours. Add sesame oil and salt to taste, stirring well.
- Make the Miso Sauce: In a small bowl, whisk together miso paste, soy sauce, rice vinegar, sesame oil, honey (if using), and 1/4 cup water. Adjust the water to reach your desired sauce consistency. Set aside.
- Prepare the Eggs: Soft-boil or poach the eggs according to your preference. For soft-boiled eggs, simmer eggs for about 6 to 7 minutes, then peel carefully.
- Assemble the Dish: Ladle the hot congee into serving bowls. Drizzle with the prepared miso sauce. Top each bowl with soft-boiled eggs, chopped green onions, toasted sesame seeds, fresh herbs like cilantro or parsley, sautéed spinach or bok choy, and a small side of pickled ginger for an added tangy flavor.
- Serve and Enjoy: Serve the congee warm. Mix the toppings and sauce into the congee as you eat for a comforting and satisfying meal.
Notes
- You can substitute vegetable broth with chicken broth if you prefer a richer flavor.
- Adjust the water quantity when cooking rice if you like thicker or thinner congee.
- Soft-boiled eggs can be swapped for poached or even a fried egg depending on your taste.
- Use white or red miso paste based on your flavor preference; white miso is milder, red miso has a stronger umami taste.
- For a vegan version, omit the eggs and ensure the broth is vegetable-based.
