  • 3/4 cup whole milk or half-and-half, warmed

Instructions

  1. Cook the potatoes: Place the peeled and chunked potatoes in a large pot, cover with cold water, add a generous pinch of salt, and bring to a boil. Cook for 15–20 minutes or until the potatoes are fork-tender, then drain well.
  2. Sauté the cabbage and onions: While the potatoes cook, melt 2 tablespoons of butter in a large skillet over medium heat. Add the thinly sliced cabbage and cook for 5–7 minutes until softened. Stir in the sliced green onions and cook for another 2 minutes to release their flavor.
  3. Mash the potatoes: Return the drained potatoes to the pot. Add the warmed milk and remaining 2 tablespoons of butter, mashing until the mixture is smooth and creamy.
  4. Combine ingredients: Stir the cooked cabbage and green onions into the mashed potatoes until evenly incorporated. Season with salt and black pepper to taste.
  5. Serve: Transfer the colcannon to a serving dish. Make a small well in the center and add a pat of butter if desired. Garnish with fresh parsley and serve warm for a classic Irish experience.
