Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream the softened butter and sugar until light and fluffy. Beat in the egg, vanilla extract, and espresso powder until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
  4. Scoop rounded teaspoons of dough, roll into balls, flatten slightly, and place on the prepared baking sheets. Bake for 10–12 minutes or until the edges are set and lightly golden. Let cool on a wire rack.
  5. Spread or pipe about 1 teaspoon of chocolate hazelnut spread onto the flat side of half the cookies. Top with the remaining cookies to form sandwiches.
  6. Optional: Dust with powdered sugar or drizzle with melted chocolate for an elegant finish.
