  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sweetened shredded coconut

Topping:

  • 24 chocolate kiss candies, unwrapped

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream Butter and Sugar: In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add Eggs and Extracts: Add the egg, vanilla extract, and coconut extract, and mix until combined.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until incorporated. Fold in the shredded coconut.
  5. Bake: Scoop tablespoon-sized balls of dough onto the prepared baking sheet. Bake for 9–11 minutes or until edges are lightly golden.
  6. Add Topping: Immediately press a chocolate kiss into the center of each cookie after removing from the oven.
  7. Cool: Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
