Instructions
- Beat Eggs and Sugar: In a large mixing bowl, beat the eggs and sugar together until light and fluffy, about 2–3 minutes.
- Add Wet Ingredients: Add the melted butter, vanilla extract, and anise extract if using, and mix well.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.
- Mix Batter: Gradually add the dry ingredients to the wet mixture, stirring until a smooth batter forms.
- Preheat Pizzelle Iron: Preheat your pizzelle iron according to the manufacturer’s instructions. Lightly grease the plates if needed.
- Cook Batter: Drop about 1 tablespoon of batter into the center of each pattern on the iron. Close and cook for 30–45 seconds, or until the pizzelle are golden and crisp.
- Cool and Serve: Carefully remove and cool on a wire rack. Repeat with remaining batter.
