Instructions

  1. Beat Eggs and Sugar: In a large mixing bowl, beat the eggs and sugar together until light and fluffy, about 2–3 minutes.
  2. Add Wet Ingredients: Add the melted butter, vanilla extract, and anise extract if using, and mix well.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Mix Batter: Gradually add the dry ingredients to the wet mixture, stirring until a smooth batter forms.
  5. Preheat Pizzelle Iron: Preheat your pizzelle iron according to the manufacturer’s instructions. Lightly grease the plates if needed.
  6. Cook Batter: Drop about 1 tablespoon of batter into the center of each pattern on the iron. Close and cook for 30–45 seconds, or until the pizzelle are golden and crisp.
  7. Cool and Serve: Carefully remove and cool on a wire rack. Repeat with remaining batter.
