Instructions
- Make the pumpkin cheesecake: Preheat oven to 325°F. Line the bottom of a 9-inch springform pan with parchment paper and grease the sides. In a large bowl, beat the cream cheese and sugar until smooth. Mix in the pumpkin, spices, and vanilla. Add eggs one at a time, mixing on low speed just until combined. Pour into the pan and bake for 45–50 minutes, or until set with a slight jiggle in the center. Cool completely, then refrigerate for at least 4 hours or overnight.
- Make the chocolate cake: Prepare the cake mix according to package directions and divide the batter evenly between two 9-inch round cake pans. Bake and cool completely. Level the tops if needed.
- Assemble the cake: Place one chocolate cake layer on a serving plate. Carefully remove the cheesecake from the springform pan and place on top. Add the second chocolate cake layer. If using ganache, heat heavy cream until just simmering and pour over chocolate chips in a bowl. Let sit for 2 minutes, then stir until smooth. Pour over the assembled cake and let it drip down the sides. Chill for at least 1 hour before slicing and serving.
