Instructions
- Prepare the Pineapple Salsa: If using frozen pineapple, thaw it completely. Chop the fresh cilantro, mince the ginger, and deseed then finely dice the jalapeño. In a small bowl, combine the pineapple chunks, chopped cilantro, diced jalapeño, lime juice, salt, and minced ginger. Stir well, then refrigerate until ready to assemble tacos.
- Marinate the Salmon: Cut the salmon fillets into chunks and place them in a bowl. Add the chipotle adobo sauce or chipotle powder, honey, avocado oil, and salt. Toss gently to coat all pieces evenly in the marinade.
- Cook the Salmon: Preheat a skillet over medium-high heat and drizzle avocado oil to coat the bottom well. Once hot, add the salmon chunks and sear for about 4 minutes on each side until cooked through and nicely browned.
- Assemble the Tacos: Warm the corn or flour tortillas. Place a layer of shredded cabbage on each tortilla, then top with cooked salmon chunks.
