Salmon

  • 16 oz Salmon filets (about 4 fillets)
  • 2 tbsp Avocado oil (divided: for marinade and skillet)
  • 1 tbsp Chipotle adobo sauce or chipotle powder
  • 2 tbsp Honey
  • ⅛ tsp Salt and pepper (to taste)

Toppings (Optional)

  • 1 tbsp Fresh cilantro (for garnish)
  • 1 cup Finely shredded cabbage
  • Queso fresco (optional, for topping)
  • ¼ cup Cilantro lime sauce (optional, for drizzling)
  • 1 Avocado (sliced, optional)

Instructions

  1. Prepare the Pineapple Salsa: If using frozen pineapple, thaw it completely. Chop the fresh cilantro, mince the ginger, and deseed then finely dice the jalapeño. In a small bowl, combine the pineapple chunks, chopped cilantro, diced jalapeño, lime juice, salt, and minced ginger. Stir well, then refrigerate until ready to assemble tacos.
  2. Marinate the Salmon: Cut the salmon fillets into chunks and place them in a bowl. Add the chipotle adobo sauce or chipotle powder, honey, avocado oil, and salt. Toss gently to coat all pieces evenly in the marinade.
  3. Cook the Salmon: Preheat a skillet over medium-high heat and drizzle avocado oil to coat the bottom well. Once hot, add the salmon chunks and sear for about 4 minutes on each side until cooked through and nicely browned.
