Instructions
- Marinate the Chicken: In a bowl, combine the thinly sliced chicken breast with 1 tablespoon soy sauce and 1 tablespoon cornstarch. Toss thoroughly to coat the chicken evenly. Set aside to marinate for 10 to 15 minutes to allow the flavors to penetrate.
- Cook the Chicken: Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry for 4 to 5 minutes until the pieces are browned and fully cooked through. Remove the chicken from the pan and set it aside.
- Sauté the Aromatics: In the same pan, add the remaining 1 tablespoon of vegetable oil. Stir-fry the minced garlic, ginger, and the white parts of the green onions for about 30 seconds until they release their fragrance, being careful not to burn them.
- Cook the Vegetables: Add the shredded cabbage and julienned carrot to the pan. Stir-fry the vegetables for 3 to 4 minutes until they are slightly wilted but still retain a crisp texture.
- Combine and Season: Return the cooked chicken to the pan. Add the remaining 1 tablespoon soy sauce, oyster sauce, and sesame oil.
