Description

Chicken Gloria is a rich and creamy skillet-cooked dish featuring tender chicken breasts smothered in a savory sauce made with mushrooms, garlic, Dijon mustard, white wine, heavy cream, and Parmesan cheese. This comforting and elegant meal comes together in about 35 minutes and can be served alongside rice, mashed potatoes, or steamed vegetables for a complete dinner.

Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Sauce

  • 2 tbsp butter
  • 1 small onion, finely chopped
  • 2 cups mushrooms, sliced (cremini or white button mushrooms)
  • 2 cloves garlic, minced
  • 1/2 cup white wine (optional, or use chicken broth)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tbsp Dijon mustard
  • 1/4 cup Parmesan cheese, grated
  • 1 tbsp fresh parsley, chopped (optional, for garnish)

Instructions

  1. Prepare Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the chicken breasts with salt and pepper on both sides to taste.
  2. Cook Chicken: Add the seasoned chicken to the skillet and cook for 6 to 7 minutes on each side until they are golden brown and the internal temperature reaches 165°F (75°C). Remove the chicken from the skillet and set aside to rest.
  3. Sauté Onions: In the same skillet, add the butter and melt over medium heat. Add the finely chopped onions and cook for 2 to 3 minutes until they soften and become translucent.
  4. Cook Mushrooms and Garlic: Add the sliced mushrooms and minced garlic to the skillet. Sauté for about 5 minutes until the mushrooms release their moisture and turn golden brown.
  5. Deglaze Skillet: Pour in the white wine (or substitute chicken broth if preferred), scraping the bottom of the skillet to loosen any flavorful browned bits. Let the wine simmer and reduce for 2 to 3 minutes.
  6. Add Cream and Broth: Stir in the heavy cream, chicken broth, and Dijon mustard. Combine thoroughly and allow the sauce to simmer for 5 minutes until it thickens slightly.
  7. Incorporate Cheese: Mix in the grated Parmesan cheese and cook for another 1 to 2 minutes until the sauce becomes smooth and creamy.
  8. Return Chicken to Sauce: Place the chicken breasts back into the skillet, spooning the creamy sauce over them. Let everything simmer together for 3 to 5 minutes to reheat the chicken and meld the flavors.
  9. Garnish and Serve: Sprinkle freshly chopped parsley on top if using. Serve the Chicken Gloria hot alongside your choice of rice, mashed potatoes, or steamed vegetables.

Notes

  • Substitute white wine with additional chicken broth if you prefer a non-alcoholic version.
  • Use cremini mushrooms for a deeper flavor, but white button mushrooms work just as well.
  • Ensure chicken breasts reach an internal temperature of 165°F (75°C) for safe consumption.
  • You can add a splash of lemon juice at the end for brightness if desired.
  • Serve with sides such as rice, mashed potatoes, or steamed vegetables to make a complete meal.
