Description

Classic Chicken Cordon Bleu features tender chicken breasts stuffed with ham and Swiss cheese, coated in seasoned breadcrumbs, pan-seared, and baked to golden perfection. This French-American main course is often served with a creamy Dijon mustard sauce that adds a rich, tangy complement to the savory flavors.

Ingredients

Scale

For the Chicken Cordon Bleu

  • 4 boneless skinless chicken breasts
  • 4 slices deli ham
  • 4 slices Swiss cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup seasoned breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter

For the Creamy Dijon Sauce (optional)

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

  1. Prepare the chicken: Place each chicken breast between two pieces of plastic wrap and pound to an even 1/4-inch thickness with a meat mallet. Season both sides with salt, pepper, garlic powder, and paprika.
  2. Assemble the rolls: On each flattened chicken breast, lay one slice of ham and one slice of Swiss cheese. Carefully roll the chicken tightly around the filling and secure each roll with toothpicks to hold its shape.
  3. Coat the chicken rolls: Dredge each chicken roll first in all-purpose flour, then dip in the beaten eggs, and finally coat thoroughly with seasoned breadcrumbs to ensure a crisp exterior.
  4. Sear the chicken: In a large oven-safe skillet, heat the olive oil and butter over medium heat. Add the breaded chicken rolls and cook for 2–3 minutes on each side until they develop a golden brown crust.
  5. Bake: Transfer the skillet to a preheated oven at 375°F (190°C) and bake for 20–25 minutes, or until the chicken is fully cooked and juices run clear, indicating it is done.
  6. Prepare the sauce (optional): While the chicken bakes, melt butter in a small saucepan over medium heat. Whisk in flour and cook for 1 minute to form a roux. Gradually whisk in milk and cook, stirring constantly, until the sauce thickens, about 3–4 minutes. Stir in Dijon mustard, garlic powder, salt, and pepper to taste.
  7. Serve: Remove toothpicks from the chicken rolls, drizzle with the creamy Dijon sauce if using, and serve immediately for a delicious meal.

Notes

  • Prepare chicken rolls ahead and refrigerate until ready to cook to save time.
  • For a more authentic French flavor, substitute Gruyère cheese for Swiss cheese.
  • The creamy Dijon sauce is optional but highly recommended to enhance flavor.
