Ingredients

Scale

Chicken and Batter

  • 2 chicken breasts
  • 1 cup buttermilk
  • 1 egg
  • 2 tbsp hot sauce
  • 1 tsp cajun seasoning
  • 1 ½ cups flour
  • 1 tsp paprika
  • 1 tsp cayenne
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt & pepper
  • Oil for frying

Glaze

  • ¼ cup butter
  • 2 tbsp honey
  • ¼ cup hot sauce

Salad and Assembly

  • ½ head iceberg lettuce
  • ½ cup parmesan cheese
  • ½ a lemon, juiced
  • Your favorite Caesar dressing
  • 2 croissants
  • Parmesan parsley butter (optional for croissants)

Instructions

  1. Marinate the Chicken: In a bowl, combine the buttermilk, egg, 2 tablespoons hot sauce, and 1 teaspoon Cajun seasoning. Place the chicken breasts in this wet batter, ensuring they are fully submerged, and marinate for at least 30 minutes to tenderize and infuse flavor.
  2. Prepare Dry Batter and Salad: In another bowl, mix together the flour, paprika, cayenne, garlic powder, onion powder, salt, and pepper to create the dry batter. Meanwhile, chop the iceberg lettuce and toss with parmesan cheese, lemon juice, and your favorite Caesar dressing to prepare the salad component.
  3. Heat Oil: Pour enough oil into a deep frying pan or skillet and heat to about 350°F (175°C) for frying the chicken.
  4. Bread the Chicken: Remove the chicken breasts from the wet batter, dredge them thoroughly in the dry batter until evenly coated.
  5. Fry the Chicken: Carefully fry the coated chicken breasts in the hot oil until golden brown and cooked through, approximately 6-8 minutes per side depending on thickness. Remove and drain on paper towels.
  6. Make Glaze: In a small saucepan, melt the butter, then stir in honey and ¼ cup hot sauce. Remove from heat once combined and glossy.
  7. Glaze the Chicken: Dip the fried chicken breasts in the honey hot sauce glaze, coating them evenly to add a sweet and spicy finish.
  8. Assemble Croissant: Toast the croissants lightly, optionally spread with parmesan parsley butter while warm. Layer each croissant with a portion of Caesar dressing, glazed fried chicken, and Caesar salad mixture.

Notes

  • Make sure the oil is hot enough before frying to prevent greasy chicken.
  • Use fresh croissants for the best texture and flavor.
  • The glaze can be adjusted for spiciness by varying the amount of hot sauce.
  • Allow the chicken to marinate longer for more flavor if desired.
  • For a lighter option, consider baking the chicken instead of frying, but it won’t be as crispy.
