  • 1 teaspoon dried parsley

  • ¼ teaspoon black pepper
  • juice of ½ lemon (optional)
  • fresh parsley for garnish

Instructions

  1. Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, and sauté for 5 minutes until softened.
  2. Add Aromatics: Stir in garlic and cook for 1 minute until fragrant.
  3. Cook Soup: Pour in chicken broth and bring to a boil. Add shredded chicken, dried parsley, thyme, salt, and pepper. Stir in star pasta and cook according to package directions, usually 6 to 8 minutes, until pasta is tender.
  4. Finish and Serve: If desired, stir in lemon juice for brightness. Garnish with fresh parsley and serve hot.

  • You can use leftover rotisserie chicken for convenience.
  • For a creamier soup, stir in ½ cup heavy cream at the end of cooking.
