Lasagna Rolls:
- 12 lasagna noodles
- 2 cups cooked chicken, shredded
- 2 cups ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 2 garlic cloves, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Alfredo Sauce:
- 3 cups Alfredo sauce (homemade or store-bought)
Garnish:
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat Oven: Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Cook Noodles: Cook lasagna noodles according to package instructions until al dente. Drain and lay flat on parchment paper to prevent sticking.
- Prepare Filling: In a medium bowl, combine chicken, ricotta, 1/2 cup mozzarella, 1/4 cup Parmesan, egg, garlic, Italian seasoning, salt, and pepper.
- Fill and Roll: Spread 1/3 cup of the mixture evenly over each noodle. Roll up tightly and place seam-side down in the baking dish.
- Add Sauce: Pour Alfredo sauce evenly over the rolls. Sprinkle with remaining mozzarella and Parmesan.
- Bake: Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until bubbly and golden.
- Serve: Garnish with parsley before serving.
Notes
- You can add spinach or steamed broccoli to the filling for extra veggies.
- Leftovers can be refrigerated for up to 3 days and reheated in the oven.
- For a lighter version, use part-skim ricotta and light Alfredo sauce.
