Description

Indulge in a delicious twist on traditional lasagna with these Chicken Alfredo Lasagna Rolls. Tender lasagna noodles are filled with a creamy mixture of chicken, cheeses, and seasonings, then baked to perfection in a rich Alfredo sauce. A comforting and satisfying meal for any occasion.

Ingredients

Scale

Lasagna Rolls:

  • 12 lasagna noodles
  • 2 cups cooked chicken, shredded
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Alfredo Sauce:

  • 3 cups Alfredo sauce (homemade or store-bought)

Garnish:

  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat Oven: Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Cook Noodles: Cook lasagna noodles according to package instructions until al dente. Drain and lay flat on parchment paper to prevent sticking.
  3. Prepare Filling: In a medium bowl, combine chicken, ricotta, 1/2 cup mozzarella, 1/4 cup Parmesan, egg, garlic, Italian seasoning, salt, and pepper.
  4. Fill and Roll: Spread 1/3 cup of the mixture evenly over each noodle. Roll up tightly and place seam-side down in the baking dish.
  5. Add Sauce: Pour Alfredo sauce evenly over the rolls. Sprinkle with remaining mozzarella and Parmesan.
  6. Bake: Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until bubbly and golden.
  7. Serve: Garnish with parsley before serving.

Notes

  • You can add spinach or steamed broccoli to the filling for extra veggies.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven.
  • For a lighter version, use part-skim ricotta and light Alfredo sauce.
