Instructions
- Prepare the Oven and Garlic Oil: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. In a small bowl, combine olive oil, minced garlic, Italian seasoning, salt, and black pepper to create a fragrant garlic oil mixture.
- Brush and Roast the Zucchini: Arrange the zucchini steaks on the prepared baking sheet. Generously brush both sides of each zucchini slice with the garlic oil mixture. Roast in the preheated oven for 12 to 15 minutes until the zucchini becomes tender.
- Add Cheese and Finish Roasting: Remove the baking sheet from the oven, sprinkle shredded mozzarella and grated Parmesan evenly over each zucchini slice. Return to the oven and roast for an additional 3 to 5 minutes until the cheese is melted and bubbly.
- Broil for Golden Top (Optional): For a golden, crispy top, broil the zucchini steaks for 1 to 2 minutes, watching closely to prevent burning.
- Garnish and Serve: Remove from oven, garnish with chopped fresh parsley if desired, and serve warm as a delicious low-carb side or vegetarian main dish.
