- 1/2 cup diced onion
- 1 cup uncooked long-grain white rice
- 2 1/4 cups chicken broth
- 1 cup milk
- 1 1/2 cups shredded cheddar cheese
- 1 cup frozen peas and carrots (optional)
- 2 tablespoons butter
- Chopped parsley for garnish
Instructions
- Cook the Chicken: Heat olive oil in a large skillet or Dutch oven. Season chicken with salt, pepper, and garlic powder. Cook until browned and cooked through, about 5–6 minutes. Set aside.
- Prepare the Rice Mixture: In the same pan, sauté onion until softened. Add rice and cook briefly. Pour in chicken broth and milk, bring to a simmer, cover, and cook for 15–18 minutes until rice is tender and liquid is absorbed.
- Finish the Dish: Stir in butter, cheddar cheese, cooked chicken, and peas and carrots. Mix until cheese is melted and everything is heated through. Garnish with parsley and serve.
