Ingredients

Scale

Main Ingredients

  • 950g cooked spaghetti squash (about 1 large spaghetti squash)
  • 1 tablespoon olive oil
  • ½ yellow onion, diced
  • 1 lb ground turkey (93/7 lean) – can substitute with ground beef
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cloves garlic, minced
  • ½ cup ketchup
  • ¼ cup mustard
  • ¼ cup nonfat plain Greek yogurt
  • ½ cup chopped pickles
  • 1 cup shredded lite cheddar cheese, divided
  • 3 large eggs

Instructions

  1. Preheat and Prep: Preheat the oven to 400°F (200°C). Grease a 9×9 inch baking dish to prevent sticking. Cook the spaghetti squash by your preferred method until tender, then shred the flesh with a fork to create spaghetti-like strands.
  2. Brown Meat and Sauté Onions: Heat olive oil in a skillet over medium-high heat. Add the diced yellow onion and cook until softened and translucent. Add the ground turkey, salt, black pepper, and minced garlic. Cook, stirring frequently, until the meat is browned and crumbly.
  3. Combine Ingredients: In a large mixing bowl, combine the cooked spaghetti squash strands, browned ground turkey mixture, ketchup, mustard, nonfat plain Greek yogurt, and chopped pickles. Stir well to evenly distribute all ingredients.
  4. Add Eggs and Cheese: In a separate bowl, whisk the three large eggs until smooth. Add half of the shredded cheddar cheese to the spaghetti squash mixture and then pour in the whisked eggs. Stir thoroughly to combine all components uniformly.
  5. Bake: Transfer the combined mixture into the prepared baking dish. Evenly sprinkle the remaining shredded cheddar cheese on top. Bake in the preheated oven for about 1 hour or until the casserole is set, golden brown, and edges are slightly crispy.
  6. Serve: Remove the casserole from the oven and allow it to cool for 15 minutes before serving to help it set and make it easier to slice and serve.

Notes

  • You can substitute ground turkey with ground beef if preferred for a richer flavor.
  • Cooking spaghetti squash can be done by roasting, microwaving, or pressure cooking, depending on your preference.
  • The Greek yogurt adds creaminess while keeping the casserole lighter compared to mayonnaise or sour cream.
  • Ensure the casserole cools properly to allow it to firm up before slicing.
  • This dish can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
