Mashed Potatoes:
- 2 cups mashed potatoes (cold and firm)
Cheese Mixture:
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped parsley
Coating:
- 1 egg (beaten)
- 3/4 cup all-purpose flour
- 1 cup breadcrumbs (preferably panko)
- Vegetable oil for frying
Instructions
- Mix the Potato and Cheese: In a large bowl, combine mashed potatoes, mozzarella cheese, Parmesan cheese, garlic powder, salt, pepper, and parsley. Mix until well combined.
- Shape the Croquettes: Scoop about 2 tablespoons of the mixture and shape into small cylinders or ovals. Refrigerate for 20–30 minutes to firm up.
- Bread the Croquettes: Set up a breading station with three shallow bowls: flour, beaten egg, and breadcrumbs. Roll each croquette in flour, then egg, and coat with breadcrumbs.
- Fry the Croquettes: Heat oil in a skillet. Fry croquettes until golden brown and crispy, about 2–3 minutes per side.
- Serve: Drain on paper towels and serve hot.

- Use leftover mashed potatoes for convenience.
- Freeze shaped croquettes before frying for later use.
- Serve with ketchup, garlic aioli, or marinara sauce.
