Instructions

  1. Heat Olive Oil: In a large pot, heat olive oil over medium heat.
  2. Sauté Onion: Add chopped onion and sauté until translucent.
  3. Add Garlic: Stir in garlic and cook for 30 seconds.
  4. Cook Carrots: Add carrots, cumin, coriander, salt, and pepper. Cook for 2–3 minutes.

  6. Blend: Remove from heat, blend the soup until smooth.
  7. Stir in Coconut Milk: Add coconut milk or cream, adjust seasoning, and reheat if needed.
