Marinade:

  • 2 pounds flank or skirt steak
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1/4 cup orange juice
  • 1/4 cup chopped fresh cilantro
  • 4 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together olive oil, lime juice, orange juice, cilantro, garlic, cumin, chili powder, paprika, salt, pepper, and red pepper flakes if using.
  2. Marinate the Steak: Place the steak in a large zip-top bag or shallow dish, pour the marinade over it, seal, and refrigerate for at least 2 hours or up to 8 hours.
  3. Grill the Steak: Remove the steak from the marinade, let it come to room temperature, preheat a grill or grill pan, grill the steak for 4–6 minutes per side, then let it rest before slicing thinly against the grain.
