Description

Decadent Caramel Brownie Cheesecake that combines a rich brownie base with creamy cheesecake swirled with caramel and topped with chocolate chips. Perfect for an indulgent dessert that blends classic flavors in every bite.

Ingredients

Scale

Brownie Base

  • 1 box brownie mix (plus ingredients listed on the package)

Cheesecake Batter

  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1/4 cup all-purpose flour

Toppings and Extras

  • 1/2 cup caramel sauce, plus extra for drizzling
  • 1/2 cup chocolate chips
  • Whipped cream for garnish (optional)

Instructions

  1. Prepare Brownie Batter: Follow the directions on the brownie mix package to prepare the batter. Grease a 9-inch springform pan thoroughly.
  2. Bake Brownie Base: Pour half of the brownie batter into the prepared pan, spreading it evenly. Bake at 350°F (175°C) for 20 minutes. Remove from the oven and allow it to cool slightly.
  3. Make Cheesecake Batter: In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract, sour cream, and all-purpose flour until just combined.
  4. Assemble Cheesecake Layer: Pour the cheesecake batter over the partially baked brownie layer in the pan.
  5. Add Swirled Brownie: Spoon dollops of the remaining brownie batter over the cheesecake layer. Use a knife to gently swirl the brownie batter into the cheesecake for a marbled effect.
  6. Bake the Cheesecake: Bake for 55 to 65 minutes, until the center is almost set but still slightly jiggly when gently shaken.
  7. Cool and Chill: Remove from oven and let the cheesecake cool at room temperature for 1 hour. Then refrigerate for at least 4 hours or overnight to fully set.
  8. Finish and Serve: Before serving, drizzle with additional caramel sauce and sprinkle chocolate chips over the top. Garnish with whipped cream if desired.

Notes

  • Ensure cream cheese is fully softened for a smooth and creamy batter.
  • For extra indulgence, add chopped pecans or drizzle melted chocolate alongside the caramel before serving.
  • Store leftovers covered in the refrigerator for up to 4 days.
