- 1 cup fresh baby spinach (chopped)
Cheese and Herbs:
- 1/2 cup shredded mozzarella cheese
- 1/4 cup fresh basil (chopped)
- 1/4 cup crumbled goat cheese or more mozzarella
Optional:
- Balsamic glaze for drizzling
Instructions
- Preheat the Oven: Preheat the oven to 375°F.
- Prepare Egg Mixture: Whisk together eggs, milk, salt, and pepper in a bowl.
- Sauté Vegetables: Cook cherry tomatoes and spinach in olive oil in a skillet.
- Add Egg Mixture: Pour the egg mixture into the skillet and top with cheeses and basil.
- Bake: Cook in the oven for 12–15 minutes until set and golden.
