Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix butter and sugar: In a large mixing bowl, beat the butter and powdered sugar until light and fluffy. Mix in the vanilla extract.
- Add dry ingredients: Gradually add the flour and salt, mixing until just combined. Stir in the chopped pecans.
- Shape and bake: Shape the dough into 1-inch balls and place them on the prepared baking sheet. Bake for 12–14 minutes until lightly golden.
- Roll in sugar: Let the cookies cool for 5 minutes, then roll them in powdered sugar while still warm. Once cooled, roll them in powdered sugar again for a thick coating.
