Ingredients
Scale
Buffalo Chicken Mixture
- 1 package (8 ounces) cream cheese, room temperature
- 2 cups (280g) rotisserie chicken, shredded and chopped
- 1 cup (113g) mozzarella cheese, shredded
- 1 cup (113g) sharp cheddar cheese, shredded
- 1/3 cup (84g) buffalo sauce
Puff Pastry and Toppings
- 1 sheet puff pastry, thawed
- 1 large egg, beaten
- Ranch dressing, for drizzling
- Extra buffalo sauce, for drizzling
- Parsley, for garnish
Instructions
- Preheat the oven: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper to prepare for baking the roll-ups.
- Make the buffalo chicken mixture: In a medium bowl, combine the cream cheese, shredded rotisserie chicken, mozzarella cheese, sharp cheddar cheese, and buffalo sauce. Mix thoroughly until all ingredients are well incorporated. Set the mixture aside.
- Prepare the puff pastry: On a lightly floured surface, roll out the thawed puff pastry into a 9×12-inch rectangle to create the base for the roll-ups.
- Assemble the roll-ups: Spread the buffalo chicken mixture evenly over the puff pastry, leaving a small border around the edges. Carefully roll the pastry into a tight log, sealing the edges as you roll. Slice the log into 1-inch thick pieces.
- Brush and bake: Place the roll-ups on the prepared baking sheet. Brush the tops with beaten egg to achieve a golden, glossy finish. Bake for 15–18 minutes until golden brown. If desired, add extra buffalo chicken mixture on top and bake for an additional 6–8 minutes for extra warmth and flavor.
- Serve and garnish: Once baked, drizzle the roll-ups with additional buffalo sauce and ranch dressing. Garnish with freshly chopped parsley and serve warm for the best taste experience.

- Use fresh or leftover rotisserie chicken for convenience and flavor.
- Thaw puff pastry properly before rolling to prevent cracking.
- Customize the level of spiciness by adjusting the amount of buffalo sauce.
- For a crispier texture, bake on a preheated baking sheet or pizza stone.
- These roll-ups can be made ahead and reheated in the oven before serving.
