Description

This Brown Sugar Pineapple Chicken recipe combines the sweetness of brown sugar and pineapple with savory chicken for a delicious Asian-inspired dish. Tender chicken cooked in a flavorful sauce, this dish is perfect for a quick and easy weeknight meal.

Ingredients

Scale

Chicken:

  • 4 boneless, skinless chicken thighs or breasts
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika

Sauce:

  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1/3 cup brown sugar
  • 1/4 cup pineapple juice
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon cornstarch mixed with 2 teaspoons water (optional, for thickening)

Garnish:

  • Chopped green onions
  • Sesame seeds

Instructions

  1. Season the chicken: Season the chicken with salt, pepper, garlic powder, and paprika.
  2. Cook the chicken: Heat olive oil in a large skillet, add the chicken, and cook for 5–6 minutes per side until golden brown and cooked through. Remove and set aside.
  3. Prepare the sauce: In the same skillet, caramelize pineapple chunks, then add brown sugar, pineapple juice, soy sauce, and apple cider vinegar. Simmer for 3–4 minutes. For a thicker sauce, add cornstarch slurry and simmer.
  4. Combine and simmer: Return chicken to the skillet, spoon sauce over the top, and let simmer for another 2–3 minutes. Serve hot, garnished with green onions and sesame seeds.
