Instructions
- Make the streusel: In a small bowl, combine brown sugar, flour, and cinnamon. Cut in cold butter using a fork or your fingers until the mixture resembles coarse crumbs. Set aside.
- Make the pancake batter: In a medium bowl, whisk together flour, sugar, baking powder, salt, and cinnamon. In a separate bowl, whisk milk, egg, melted butter, and vanilla extract. Pour wet ingredients into dry ingredients and mix just until combined, leaving a few lumps for a tender texture; avoid overmixing.
- Cook the pancakes: Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or oil. Pour ¼ cup batter onto the skillet for each pancake. Quickly sprinkle about 1 tablespoon of streusel over each pancake before it sets. Cook until bubbles form on the surface and the edges look dry, about 2–3 minutes.
