Description

A quick, delicious, and nutritious Broccoli Cheese Pasta Dinner that’s perfect for busy weeknights. This comforting dish combines tender pasta, vibrant broccoli, and a creamy cheese sauce to please both kids and adults alike, making it an excellent way to include veggies in your meal.

Ingredients

Scale

For the Pasta and Vegetables

  • 8 ounces pasta (such as penne or rotini)
  • 2 cups fresh broccoli florets
  • Salt, to taste

For the Cheese Sauce

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups milk
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

  1. Cook the Pasta and Broccoli: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. In the last 3-4 minutes of cooking, add the broccoli florets to the boiling water with the pasta. Drain both pasta and broccoli, and set aside.
  2. Prepare the Cheese Sauce: In a medium saucepan over medium heat, melt the butter. Whisk in the flour and cook for about 1-2 minutes until it forms a roux but does not brown. Gradually whisk in the milk, continuing until the sauce thickens and coats the back of a spoon, about 5-7 minutes. Remove from heat and stir in the shredded cheddar cheese until melted. Season with garlic powder, salt, and pepper to taste.
  3. Combine and Serve: Add the drained pasta and broccoli to the cheese sauce and gently toss until everything is evenly coated. Serve immediately, optionally garnished with extra shredded cheese or freshly cracked pepper.

Notes

  • For a creamier texture, use half-and-half or heavy cream instead of milk.
  • Try adding cooked grilled chicken or shrimp for added protein.
  • Experiment with different cheeses like Gruyère, mozzarella, or Monterey Jack for flavor variation.
  • Pair this dish with a light side salad or crusty garlic bread for a complete meal.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days; reheat gently to prevent the sauce from separating.
