- 2 cups low-sodium chicken or vegetable broth
- 2 cups whole milk
- 3 cups fresh broccoli florets, chopped small
- 1 large carrot, grated or finely chopped
- 2 cups shredded sharp cheddar cheese
- ½ teaspoon salt
- ¼ teaspoon black pepper
- pinch of ground nutmeg (optional)
Instructions
- Saute Aromatics: In a large pot, melt the butter over medium heat. Add the chopped onion and cook until softened. Stir in garlic and cook for 1 minute.
- Create Roux: Sprinkle in the flour and cook, whisking constantly, for 1–2 minutes to form a roux.
- Add Liquid: Slowly pour in the broth while whisking, followed by the milk. Bring to a simmer and cook until slightly thickened.
- Cook Vegetables: Add broccoli and carrot, simmer for 15–20 minutes until tender.
- Finish Soup: Remove from heat and stir in shredded cheddar until melted. Season with salt, pepper, and nutmeg.
- Serve: Enjoy warm.
Notes
- For a smoother texture, blend part or all of the soup using an immersion blender.
- You can also use frozen broccoli, just reduce the cooking time slightly.
