Eggs

  • 10 white corn tortillas or 6” flour tortillas

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to prepare for baking the taquitos.
  2. Warm Sausages: Heat a skillet over medium heat and cook the fully cooked sausage links until heated through. Remove the sausages from the pan and keep the grease in the skillet.
  3. Scramble Eggs: In a bowl, whisk together the eggs and water or milk (if using), then season with salt and pepper. Pour the mixture into the skillet with the sausage grease and cook, stirring gently, until the eggs are fully scrambled and cooked through. Optionally add chopped spinach to the eggs before cooking for extra nutrition.
  4. Warm Tortillas: Heat the tortillas until they are soft and pliable so they can be rolled easily without breaking. This can be done on a dry skillet or wrapped in a damp towel and microwaved briefly.
  5. Assemble: Lay each warm tortilla flat, spread a portion of scrambled eggs in the center, sprinkle with shredded cheese, and place one sausage link on top. Carefully roll each tortilla up tightly and place seam side down on a baking sheet.
  6. Bake: Lightly spray the rolled taquitos with cooking spray to help them brown and crisp in the oven. Bake on the preheated baking sheet for 10-15 minutes or until golden brown and crispy.
