- 2 cups granola
- 1/4 cup honey
- 2 tablespoons coconut oil, melted
For the Filling:
- 1 1/2 cups Greek yogurt
- 1 tablespoon honey or maple syrup
- 1 teaspoon vanilla extract
For the Topping:
- 2 cups assorted fresh fruit (berries, kiwi, mango, grapes, peaches)
- Optional: fresh mint for garnish
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C).
- Prepare the Crust: Pulse granola in a food processor until finely chopped. Add honey and melted coconut oil, pulse until mixture sticks. Press into a tart pan, bake for 8–10 minutes, then cool.
- Make the Filling: Mix Greek yogurt, honey/maple syrup, and vanilla until smooth. Spread over the cooled crust.
- Add the Topping: Arrange fresh fruit decoratively on top. Garnish with mint if desired.
- Serve: Serve immediately.
Notes
- For a no-bake version, chill the granola crust in the fridge for 1 hour instead of baking.
- You can also make mini tarts using small tart pans or ramekins.
