  • 2 cups granola
  • 1/4 cup honey
  • 2 tablespoons coconut oil, melted

For the Filling:

  • 1 1/2 cups Greek yogurt
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon vanilla extract

For the Topping:

  • 2 cups assorted fresh fruit (berries, kiwi, mango, grapes, peaches)
  • Optional: fresh mint for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C).
  2. Prepare the Crust: Pulse granola in a food processor until finely chopped. Add honey and melted coconut oil, pulse until mixture sticks. Press into a tart pan, bake for 8–10 minutes, then cool.
  3. Make the Filling: Mix Greek yogurt, honey/maple syrup, and vanilla until smooth. Spread over the cooled crust.
  4. Add the Topping: Arrange fresh fruit decoratively on top. Garnish with mint if desired.
  5. Serve: Serve immediately.

Notes

  • For a no-bake version, chill the granola crust in the fridge for 1 hour instead of baking.
