- 3 slices of whole grain bread
- 2 tablespoons mayonnaise
- 1 tablespoon butter
Egg & Bacon
- 2 large eggs
- 4 slices of smoked bacon

- 1 ripe tomato, thinly sliced
- 1 avocado, mashed
- 2 slices of cheddar cheese
- Fresh lettuce leaves

- Salt and pepper to taste
Instructions
- Cook the bacon: Heat a skillet over medium heat and cook the smoked bacon slices until crispy. Once cooked, transfer them to paper towels to drain excess grease and set aside.
- Prepare the eggs: In the same skillet, melt the butter over medium heat. Crack the eggs into the skillet, season with salt and pepper, and cook until the whites are set but the yolks remain runny. Optionally, flip them to cook both sides if desired.
- Toast the bread: Toast the three slices of whole grain bread until golden brown using a toaster or by broiling in the oven.
- Spread mayonnaise: Evenly spread mayonnaise on one side of each toasted bread slice to add moisture and flavor.
- Assemble first layer: On the first slice of bread, mayonnaise side up, layer fresh lettuce leaves, thin slices of tomato, and the crispy bacon slices.
- Add second bread slice: Place the second slice of bread on top of the bacon layer with the mayonnaise side down. Spread the mashed avocado on the exposed top side of this bread slice.
- Top with eggs and cheese: Layer the cooked eggs on top of the mashed avocado, then add the cheddar cheese slices over the eggs.
- Complete sandwich: Place the third slice of bread on top, mayonnaise side down. Gently press the sandwich to help the layers hold together.
- Serve: Secure the sandwich with toothpicks to maintain structure and carefully cut it into halves or quarters for easier handling and serving.
