Description

This Blueberry Muffin Fudge is a delightful no-bake dessert combining the creamy sweetness of white chocolate with the fruity burst of dried blueberries and the nostalgic crunch of blueberry muffin crumbs. Perfectly balanced with a hint of lemon zest, this easy-to-make fudge sets quickly in the refrigerator and offers a rich, indulgent treat that’s ideal for dessert or snacking.

Ingredients

Scale

Fudge Base

  • 2½ cups white chocolate chips
  • 1 (14 oz) can sweetened condensed milk
  • 1 teaspoon vanilla extract
  • ½ teaspoon lemon zest
  • pinch of salt

Add-ins

  • ½ cup dried blueberries
  • ½ cup crushed blueberry muffin crumbs (from 1 small baked or store-bought muffin)

Instructions

  1. Prepare the Pan: Line an 8×8-inch baking dish with parchment paper to ensure easy removal and clean-up.
  2. Melt the Chocolate: In a saucepan over low heat, combine the white chocolate chips and sweetened condensed milk. Stir constantly until the mixture is fully melted and smooth, ensuring it does not burn.
  3. Add Flavorings: Remove the saucepan from heat. Stir in the vanilla extract, lemon zest, and a pinch of salt to enhance the flavor profile of the fudge base.
  4. Mix in Blueberries and Crumbs: Gently fold in the dried blueberries and half of the crushed blueberry muffin crumbs, distributing them evenly without breaking up the texture too much.
  5. Transfer to Pan: Pour the fudge mixture into the prepared baking dish. Use a spatula to smooth the top for an even layer.
  6. Add Topping: Sprinkle the remaining muffin crumbs on top of the fudge and lightly press them in to adhere.
  7. Chill: Place the pan in the refrigerator and chill for at least 2 hours until the fudge is firm and set.
  8. Serve: Once firm, cut into 25 small squares. Serve chilled or bring to room temperature for a softer texture.

Notes

  • Lemon zest adds brightness but can be omitted for a richer and creamier fudge.
  • For extra texture and flavor, gently toast the muffin crumbs before mixing them into the fudge base.
  • Store fudge in an airtight container in the refrigerator for up to one week.
